1 Cup Chopped onions
4 Chopped Garlic Cloves
1 Medium Eggplant
2 Cans Tomato Sauce
2 Tablespoons De la Dia Spice Mix
2 Tablespoons Verde Spice Mix
Saute onion until transparent.
Add garlic (do not burn).
Add eggplant and cook until soft.
Add all spices, stir and cook for 2 minutes.
Add 2 cans tomato sauce.
Rinse each can with ½ can of water & add to pot.
Cook on low for 2 or 3 hours.
Serve with your favorite pasta, salad and crusty bread.
