Oven-Fried Chicken

1 teaspoon Verde
3 cups cornflakes or 1/2 cup fine dry bread crumbs
1 2 1/2 to 3-pound broiler fryer chicken, cut up
1/4 cup margarine or butter, melted


If using cornflakes, crush finely enough to make 1 cup crumbs. Mix cornflakes or bread crumbs with Verde mix. Set aside.

Rinse chicken and pat dry. If desired, sprinkle with salt and pepper. Brush chicken with melted margarine or butter. Roll chicken in coating mixture. Arrange chicken in baking dish, skin side up, making sure pieces don't touch. Drizzle any remaining margarine or butter on top.

Bake at a 375 degree oven for 45 to 55 minutes, or till tender and no longer pink. Do not turn.

Serves 6.
